A few weeks ago, the hubster and I woke up around am to the sound of howling more like screeching coyotes somewhere behind our house. My arm went up to poke the hubster, when he turned and asked if I heard the noise.

The coyotes sounded pretty close to our house, and were barking repeatedly, in a high-pitched screech.

Luckily, the barking and screeching stopped a few minutes later. And, hopefully, that meant the dog was safe inside and the coyotes were far, far away. So, the occasional coyote sighting is not necessarily rare, but still surprises me every time.

Especially when I heard their shrieking. After the coyotes retreated elsewhere, it took me a while to fall back to sleep. And since that happened on a Sunday night, I was not too happy to get up on Monday morning.

So to keep myself on the right track of eating better, I challenged myself to eat better breakfasts for seven days in a row. Granola: Ultimately, homemade is best. I recommend my fabulous granola recipe. Berries: My standard is chopped strawberries, blueberries, and blackberries.

I sometimes add raspberries if I have them. Honey: I recommend finding honey that is local to you. Their honey is wonderful! Pisarcik Flower Farm is the place where I get a lot of my flowers. I also need to give a little shout-out to this handy and adorable honey dipper. It works perfectly especially for how I purchase my honey.

Again, this is a straightforward process. Add the yogurt to your bowl. Drizzle the honey. I like to drizzle the honey over the berries before adding the granola. Sprinkle on the granola. The granola is just so good! It adds color and aids digestion! It has lots of my favorite things and flavors.

Plus, it fits into my breakfast calorie guidelines but is so satisfying. Add honey, fruit, berries, seeds, nuts, etc. The possibilities are virtually endless. The fiber in the granola helps with energy while the probiotics in the yogurt help with digestion. Yogurt with granola is also high in protein, vitamin B, magnesium, phosphorus, potassium, and other vitamins.

This breakfast always leaves me feeling full through lunch and then some! Hosting breakfast or brunch? Then you need to try a Yogurt Parfait and Granola Bar! Your guests are going to love it! I love making my own granola. Can be in oven or pot. But unfortunately I had to give it up because my doctor forbade me gluten. Now, for breakfast, you can only have rice porridge or all the damn eggs, but without bread or tortillas.

This hits all the buttons for me! Return the strained mixture to the heat, add the remaining pint of blackberries and cook just until the berries are coated with the syrup and heated through. Spoon the yogurt into a bowl, top with a few tablespoons of the berries, sprinkle with the pistachios and serve.

She has woken me up in the night a couple times, and it always scares the heck out of me!
