I have never calculated the calories for this salad, but I have used an app called Lose It! that worked well to determine nutritional info. This stays fresh for days in the fridge! The only downside to eating it days later is the amount of liquid that has accumulated in the bottom of the bowl from all the veggies.

I tried the recipe and I loved it. Now for the results — In six weeks of eating this at least one meal a day as well as for snacks , I have lost 32 and 5 inches on my waist. Wow, that is amazing!!

Oh, that makes my heart happy, Carol Ann! Thank you for sharing your recipe experience with me. I have never calculated the calories for this salad, but I have used an app called Lose It! that worked well to determine nutritional info. This stays fresh for days in the fridge!

The only downside to eating it days later is the amount of liquid that has accumulated in the bottom of the bowl from all the veggies. Using a slotted spoon to plate will remedy that!

I really enjoyed this dish, it was very light and refreshing. The only reason I'm not giving it a 5 star is because my kids weren't really fans and my husband was indifferent.

This salad was so good, I used garbanzos instead of the kidney beans, and chopped kalamata olives instead of the pine nuts because the store was out, and a teaspoon of dried oregano because I think the original recipe calls for fresh, but it was perfect! I'd definitely serve it up with some grilled steak or chicken next time.
