Kidney bean Mexican recipes -

I imagine that if people are trying to eat healthy, they woudl want to know. Hope that helps. I found this recipe when I was about to make some tostadas and realized I did not have any refried beans. I only had a can of whole kidney beans so quickly checked online to see if ok to refry kidney beans.

For those who prefer less salt, always rinse your canned beans thoroughly to reduce sodium content and omit the salt or use less! Simple fix.

To the saucepan, I added some olive oil and fried the beans, adding some homemade salsa. At first the beans may look very runny. Continue cooking on low heat, stirring frequently, preferably with a rubber spatula.

Before you know it, the beans will thicken up! In Mexican cooking, refried beans are just that…refried. I did not notice any oil or fats added in this recipe. On a limited salt diet. Heated for 10min. Easy enough to make, but way too much white pepper! Way too salty and peppery.

I added 2 more cans of beans to make it restaurant quality. I found it inedibly salty. I used a can of beans in brine so perhaps this requires a larger can.

No size is noted in the recipe. In order to salvage it I added another can of beans and doubled everything else but added no additional salt. It was ok but still extremely salty.

Great recipe — bit too much salt. Thanks for the starter, though! I loved this…. I made some beans by soaking, cooking, then freezing them in. Can sized portions. It is seriously so awesome…it has ruined me for all other refried beans!

I topped it with a little cheddar and hot sauce! Loved the recipe! Wish I had looked at your notes section sooner. I added salt when the can already had salt added.

Otherwise, fantastic recipe. Fantastic recipe! I see that you have taken note about the saltiness — 1 tsp was definirely too much. This was Delicious. Our beans had too many preservatives in the liquid for me to want to cook with it, so I used your tip to add veggie broth.

We also omitted the salt since our beans were quite salty to start. Servings 3. Suggested accompaniments Romano lettuce shredded Dollop of hummus or mayonnaise.

Gently heat the oil in a large frying pan skillet. Fry the onions on medium heat until they start to soften. Add the pepper and mushrooms and continue cooking until the mushrooms have started to release their liquid. Add the taco beans with sauce and kidney beans. Simmer on medium heat, stirring now and then until the sauce has thickened.

Taste test and adjust the seasoning to suit. When the beans are almost ready, arrange the taco shells upside down in a deep sided oven tray. Bake in the oven until they have crisped up we tend to leave them in longer than the packet instructions… usually about 5 minutes at C fan.

Arrange four in each bowl and tuck some salad leaves down the sides. Finish with a dollop of hummus or mayonnaise and serve. The tacos are best eaten immediately otherwise they go soggy. If I have to pick my favorite cuisine, it will be Mexican, hands-down.

I love how similar it is to Indian cuisine and yet, the flavors are so different. I also love Mexican because it is very vegan-friendly. Cheese and sour cream are probably two of the most used dairy ingredients in Mexican food. And these can easily be given a miss.

I have used canned kidney beans and flour tortillas here. You can also use canned red beans or pinto beans for this recipe. As for the tortillas, I have used wholemeal flour tortillas.

Corn tortillas or even the regular flour tortillas work well here. If you are interested, you can even try making whole wheat tortillas and make some whole wheat quesadillas. Veggies- Sweet corn kernels give a nice sweet bite in this recipe.

Bell peppers add a crunch in the filling. Personally, I love both these veggies in my quesadillas. Cheese- In this kidney bean quesadilla, I have used sliced cheddar.

You can also use grated cheddar. Both white and red cheddar work equally well here. You can also grate cheese cubes to use here.

Cilantro — Like all mexican recipes, quesadilla filling too uses cilantro. And because I love it, I tend to add a little more than usual.

Feel free to adjust the amount of cilantro based on your preferences. Since we are using canned beans, frozen sweet corn kernels and flour tortillas, not much has to be done in terms of prep. However, this filling is freezer-friendly.

I usually make a double batch and freeze half. To freeze the filling, simply transfer the portion you want to freeze to a freezer-safe bag or box. I recommend using a freezer-friendly silicone bag.

If you are using a zip-lock bag or silicone bag, then make sure to release all the air out and flatten the bag evenly.

Label it with the date. Freeze till ready to use. Whenever you want to use the filling, add it to a pan and gently reheat on low flame for about 5 mins. Heat a pan with oil. Toss in the onions, garlic and bell peppers next.
