Sweet, but tangy pomegranate seeds mixed with acidic tomatoes, plus classic salsa flavors like red onion, cilantro and garlic make this 5-ingredient Pomegranate Salsa a must make to kick off your Thanksgiving celebration…or Taco Tuesday! Bring vinegar to a boil in a small saucepan over medium-high; boil, swirling pan occasionally, until reduced by half, about 3 minutes. Remove from heat; set aside. Brush both sides of onion slices evenly with 1 tablespoon oil.

Cucumber and pomegranate salad should be stored in an airtight container in the refrigerator. Properly stored salsa will last for up to 5 days.

Unfortunately, this winter salsa does not freeze well as it contains cucumbers. Since cucumbers are high in moisture they will turn to ice when diced and frozen, which results in a very mushy, watery texture once thawed.

Hi Nicole, I wish this salsa and most food in general lasted longer in the fridge. However, according to the USDA, it will last up to 5 days when properly stored.
