For the coconut whipped cream, I use canned full-fat coconut milk which only comes as unsweetened. My boyfriend is allergic to cashews so is there another ice cream I could use to replace the cashew one for this recipe?

thanks so much 🙂. I made this for my daughters 4th birthday party. Her cousin has a dairy allergy and is gluten intolerant. I am soooo pleased! Since my family is large, I had to triple to recipe and split it all out between 4 disposable meatloaf tins.

After they were frozen solid, I arranged the 4 blocks in to the number 4, frosted it and covered it with sprinkles. Did you pull the filling out of sandwich cookies or left it intact? Have you tried doing it in a springform pan? And if I did it one do you think I would have to double the ice cream and cookies?

I want to make this for Thanksgiving and need to feed a crowd and have the leftovers for myself! Do you pull the cake out of the freezer and then use the whip and sprinkles right before serving? Or do you assemble it all and freeze all together?

You can do that but I frost it with the whip and sprinkles ahead of time. You just have to let it sit out at room temperature for a bit before serving.

I have a real weakness for sweets and these cake sure do look great! I love dairy free alternative milk products! They are a staple in my house. Umm…drooling over here! This looks so delicious. pun intended! I think I may make one to bring to a pre-Thanksgiving dinner!
