Cup acidity is usually brighter than a similar natural process bean. After this they go into a wash tank for a specific period usually hours where the remaining cherry residue is washed off the beans.
This processing results in a clean tasting cup. It is usually not as fruity. The acidity is usually higher, and the cup taste qualities are brighter. You might expect custom roasted coffee to take quite a while to get roasted and then delivered to you….
