That said, feel free to experiment and try different berry combinations, there are so many options out there. Preparing the batter for this cake has one peculiar step that really makes this cake shine - browning butter.

This adds a nutty fragrance to the cake. This is another trick that makes this berry cake so good and so different from other berry cakes. Once the batter is done, pour it into a greased and lined cake pan and top with berries.

There is no need to mix the berries into the batter as they will add too much color to it. The timing will depend on whether you used fresh or frozen berries. Naturally, using frozen berries will increase the baking time. Using a larger but shallower pan will decrease the baking time.

Once the cake is ready, take it out of the oven and let it cool on a cooling rack for minutes. Run a butter knife around the perimeter then carefully take it out of the pan and place it on a serving plate.

Dust with powdered sugar and serve. This cake is also very, very good chilled overnight in a fridge. That is if you can manage to wait that long. Your email address will not be published. Notify me of new comments.

Yes, you can. I actually like mine cold so sometimes it goes in the fridge after cooling down and consumed the next day. It's hard to wait though; My wife loves it warm but enjoys the cold one too, so making two works best - we enjoy one the day of baking and the other one the next day or even two days later.

It will keep very fresh in the fridge for a couple of days without any problem. Happy baking! This is my favorite bery cake. It is easy to make, but not so easy for me to do the egg whites correctly.

Ingredients For the Cake g unsalted butter g caster sugar g self raising flour 6 medium eggs g summer berries.

For the Coulis g summer berries g caster sugar. For the Buttercream g unsalted butter g icing sugar tbsp coulis. For the Decoration Strawberries Raspberries Blackberries Blueberries Red Currants Fruit Coulis. Grams - Ounces. Instructions For the Cake! Add your butter, sugar, self raising flour and eggs to a stand mixer bowl or other bowl if you don't have a stand mixer and beat together until smooth.

Alternatively you can beat the butter and sugar until light and fluffy, and then add in the flour and eggs. Fold through the fruit, and split between the two tins. Bake in the oven for minutes, or until baked through.

Sometimes because of the fruit it can take a little longer to bake, so keep an eye on it. Once baked, leave to cool in the tin for minutes, and then remove carefully and cool fully on a wire rack.

I find it easier to keep the parchment paper on the bottom of the cake when cooling because of all the fruit. For the Coulis Whilst the cake is cooling, make your coulis. Alternatively, you can do this at any time and store it in the fridge.

Add your fruit to a medium sized pan. Add your the sugar to the pan, and heat the mixture on a medium heat. Stir it often so the sugar doesn't catch, and mash the fruit down as it softens.

Leave the coulis to cool fully. Store it in the fridge whilst not using for up to 4 days. For the Buttercream Beat room temperature unsalted butter NOT SPREAD for a few minutes so its really smooth and supple. Add in the icing sugar and beat again. Add in the coulis and beat until smooth.

For the Decoration Put your first layer of your cake onto a plate, and slather on half of the buttercream. Add the second layer of the cake, and slather on the rest of the buttercream. Decorate the cake with the berries of your choice, and a drizzle more of the coulis!

Notes This cake should really be stored in the fridge because of the amount fresh fruit, but it does make it slightly firmer once refrigerated. Its best on the day of baking. Frozen berries will produce more liquid when baking so it might take longer to bake. You can easily use any shop bought fruit coulis if you don't want to make it!
