Drain any excess water from the lentils. Heat olive oil in a medium-sized skillet, over medium heat. Add chopped garlic cook for 1 minute, until fragrant.

Stir in tomato sauce, remaining vegetable broth, lemon juice, salt, black pepper, ginger, cumin, turmeric, paprika, garam masala, and cooked lentils. Garnish with chopped cilantro when ready to serve. Notes This recipe serves two people as a main dish. Feel free to double the recipe for a larger group.

Ingredients Mediterranean braised lentils 1 tablespoon oil 1 medium red onion diced 2 teaspoons garlic minced 1 tablespoon tomato paste 1 teaspoon smoked paprika ½ teaspoon fennel ground ½ teaspoon oregano 1 cup green lentils ½ cup red wine 2 cups vegetable broth salt and pepper.

Black pepper yogurt 1 cup Greek yogurt 1 ½ teaspoons freshly cracked black pepper. Cherry tomatoes 1 tablespoon olive oil 1 pint cherry tomatoes halved salt and pepper. Sizzled greens 2 tablespoons olive oil ¼ cup fresh dill chopped ¼ cup fresh parsley chopped juice of ½ lime.

Remaining ingredients 4 poached eggs. Instructions Heat 1 tablespoon of oil in a medium saucepot over medium-high heat. Add the chopped red onion and saute until softened, about minutes.

Add minced garlic, tomato paste, smoked paprika, fennel, oregano, and lentils, stirring to combine. Add red wine and bring to a simmer.

Continue to cook until almost all of the red wine has evaporated. Add vegetable broth and bring to a boil. Reduce heat to medium-low, cover the pot, and continue to cook for minutes or until the lentils are tender and the liquid has almost all evaporated.

Season with salt and pepper. Meanwhile, make the black pepper yogurt. Sautéed veggies don't go well with a cold lentil salad. It would have been better with raw.

There was way too much oil. Overall, a boring dish. I love this salad. It's easy to throw together and the flavors are delicious. I preferred eating it warm or room temperature. This is definitely on the rotation. This was fantastic—made it ahead of time for a lunch for family visiting from out of time and it worked great.

I did. make a couple subs based on what I had on hand lemon pepper seasoning for the juice, chopped frozen red pepper slices from a time when I had too many, and sunflower micro greens for the beans, and sweet onions for red.

But even still, the flavors worked so amazingly that I cannot wait to try it again with the proper ingredients. Also, the dressing was quick and used pantry staples so I will be having fun trying variations without too much hassle.

Serve with crusty bread and fresh lemon juice for the most delicious meal. This easy everyday recipe is inspired by the Moroccan Harira soup that I discovered a few years ago during a short yet wonderful trip to Fez.

Note: this is a quick description with step-by-step photos, the full recipe is at the bottom of the page. Lentils: both brown or green lentils are fine.

Make sure to pick out any bad lentils, debris, and rinse them well. Onion: use one large onion, any colour. Celery: the recipe uses ribs and leaves to bring more aromatic flavor. You can also stir in a couple of chopped or diced carrots for more texture and nutrition.

Spices: the mix of turmeric, ginger, cinnamon and ground cumin gives this soup wonderful aromatic notes. Tomatoes: although the traditional recipe uses fresh tomatoes, canned tomatoes work fine for convenience. The smooth tomato sauce or passata is perfect, but you can get the same texture by blending diced or whole tomatoes in a small food processor as I did here.

Fresh herbs: parsley and cilantro aka coriander in the UK add extra aromatic flavor and they really make the difference. Lemon: the addition of some fresh lemon juice to taste brings a touch of acidity that works beautifully with the robust spicy flavor.

Broth: I used low-sodium vegetable broth, but you can use your favorite broth if you wish, just make sure you adjust the seasoning to taste. Flour : the recipe calls for a mixture made of water and flour called tadouira. This is basically a slurry that helps to thicken the soup at the end of the cooking time.

Feel free to skip this step if you want to keep the soup gluten free. Simply skip the slurry made with water and flour and use an immersion blender to partially purée the lentil soup.

Blend the soup. Use an immersion blender to spot-blend for a few seconds. This will break up the chunkiness and give the soup a slightly creamier base. Finish with flavor. Stir in the kale and lemon juice, and simmer for an additional minute or two to soften the kale. Taste the soup, and add any additional lemon juice, salt, or pepper before serving.

Hi Masha — The little bits in the soup are the rest of the ingredients, such as carrots, celery, and onions. You offer great recipes. The Mediterranean Lentil soup is added to my recipe box. Lisa might say this, but I so agree: This is, without a doubt, the best lentil soup I have ever fixed.

Proof, you ask? I have fixed this soup for company 3 times and each time my guests want the recipe. Look no further for a real winner winter soup! I would sub for water or vege broth to lower the calories. Everything else is perfect in this recipe.

I like the ideal no meat involved instead your veggies is excellent choices. So, I randomly bought fire roasted tomatoes for the pantry the other day. Then I saw your recipe. It was fantastic! Surprised my teacher wife when she got home from school with some soul warming soup.

It can be a little Plant-based metabolism booster to Meditwrranean the desired tenderness of the Mediterrnean without undercooking or overcooking them. The Medkterranean in this recipe are very traditional to the Greek island of Crete. The combination of cinnamon and orange really define the flavor of this dish. I wanted to saute everything in the Instant Pot first to bring out more of the flavor. When testing this recipe out, I tried one version with crushed tomatoes, and one with grated tomatoes.
